Finally, the weekend we’ve all been waiting for, the start of the summer season, is here! When I think of Memorial Day weekend, I think of my childhood. Cook-outs, boat trips, sun block and the beach. The smell of hamburgers and hotdogs on the grill always brings me back to back yard parties, running around in the sprinkler with my sister. This year, I am delighted to say, my sister and her family are in town, so we are having a cook-out at my mothers house with all of them. We plan to decorate in red, white, and blue, and have a festive meal to kick off the best time of year, in the best place in the world, the Brunswick Beaches! My contribution this year is going to be a red, white and blue cream cheese trifle. Its simple, and delicious. Sure to be a hit with adults and kids a like. My recipe is below. I am old fashioned when cooking, and don’t really do exact measurements, but I’ll try my best below. The worse thing you can do is add too many strawberries, and hey, is there such a thing as too many strawberries?
Ingredients:
Pre Made Pound Cake ( Or Angel Food Cake would work as well)
About 2 cups of sliced strawberries (or as much as you want)
About 2 cups of blueberries (or as much as you want)
2 8 oz package of cream cheese, softened (finally, an exact measurement!)
1 1/2 cups of packed brown sugar
2 teaspoon of vanilla extract
Directions:
Mix together the cream cheese, brown sugar and vanilla extract. You can do this by hand or with a mixer if you would like it more “whipped”. Put aside.
Cut your cake up into 1-2 inch cubes. They don’t have to be perfect.
In a trifle dish, layer the pound cake first. Next add 1/3 of the cream cheese. Then add the strawberries. On top of the strawberries add another third of the cream cheese. Next comes the blue berries. And the rest of the cream cheese on top.
Voila! A red, white and blue trifle that’s not only pretty, but yummmmy!
I’m really excited to see my little nieces face as she eats this dish. She is a big fan of both strawberries and blueberries. In fact blueberries are one of her favorite foods. I’m sure it will be a hit with her!
Everyone might not be as blessed as me to live in Ocean Isle Beach year round, but this dish can be enjoyed anywhere this Memorial Day Weekend. If you didn’t make it down this weekend, we hope you will have a chance to visit the Brunswick Beaches soon! Wishing you a safe and happy holiday.
